My name is Carlton Logan. And I am He.
I am a self-taught baker and chef.
I learned by reading Joy of Cooking, Betty Crocker and all of the cookbooks written by the Doyen of Desserts, Maida Heatter.
I studied with the best culinary teachers by watching them on PBS…Julia Child, Marcella Hazan, Madeleine Kamman, Graham Kerr and The Frugal Gourmet, Jeff Smith.
I applied this knowledge and these learned skills first by assisting local caterers while working full time at Williams-Sonoma. Then, I started another part time job - after making cakes for friends and co-workers, I started a dessert catering business, Butler’s Catered Desserts, named after my baker god parents, Samson and Loretha Butler. For many years, they owned a bakery in Kansas City, Butler’s Bakery.
When I saw a need for cooking classes in the city, I thought Williams-Sonoma would be the perfect place. And I also knew of some local instructors from a cooking school that had closed several years before. But something different happened. My manager suggested I teach the classes! So, for several years, I taught classes on basic recipes, regional favorites and classic desserts.
Then, someone suggested I apply for the job as chef at a local special events facility in Lee’s Summit. I was concerned because I’m not classically trained. But I decided to apply for the job. In I walked with petite versions of my popular desserts at the time: Mexican Mocha Torte and Maida Heatter’s Chocolate – Brownie Cheesecake. And with those, I got the job at Longview Mansion. For 5 years, I cooked for weddings, social and civic events, Christmas luncheons and dinners and tours of the mansion.
